Creamy Ranch Buffalo Chicken Dip

I am not a fan of bleu cheese whether salad dressing or crumbles. But I LOVE Buffalo Chicken Dip so I decided to put my own twist on the recipe.

I use Ranch Dressing instead of Bleu Cheese and Shredded Cheddar.

Buffalo Dip 1 (1)

I use a blender to cream all the ingredients together, place in a baking dish, pop in the oven at 350 degrees for 20 minutes and Boom! Yummy Dip for any event.

Here is what I do:

2 – 8oz pkg of cream cheese

1 cup hot sauce

1 cup ranch dressing

1 cup shredded cheddar

1 can cooked chicken shredded (I like to make fresh chicken and shred it myself, but this comes in handy when I need a quick dip)

After I blend everything together with my mixer, I add a little shredded cheddar to the top and put in the oven at 350 degrees for 20 minutes.

Love this dip! Enjoy! It’s also one of my favorite gluten free snacks :)

I just made this dip and I know it’s gonna be gone in like ten minutes, so I’m off to grab some corn tortilla chips and sneak some!

Light and Loaded Potato Soup

Hi, I am Shannon from Coupon Savings In The South. I am so happy to be here to show you some of my favorite winter time comfort food.

Light & Loaded Potato Soup

6 cups frozen hash brown potatoes, partially thawed

1 onion chopped

6 cups fat free chicken or vegetable broth

¼ cup all purpose flour

1 (12oz) can evaporated skimmed milk, divided

¾ cup non fat plain Greek yogurt

Salt and pepper to taste

Green onions, cheese, turkey, bacon, can be optional toppings.

1. In a slow cooker mix potatoes, onion, and broth. Cook on low for 6 to 8 hours.

2. In a small bowl mix flour into milk, stir into potato mixture. Increase to high. Cover; cook 20 to 30 minutes or until mixture thickens, stir in yogurt and season to taste.

3. Serve with green onion, cheese, and bacon or any other additional toppings.

4th of July Blogger Picnic Recipe Hop & Giveaway!

My recipe is a quick cool summer salad that my husband made just the other day.  We had everything in the house and it really added some great flavor to our dinner.

All you need are:

Cucumbers – 1 – 2 cut up in to pieces, you can leave the skin on if you like.

Italian Dressing – enough to cover the cucumbers

Black Olives- 1 small can, whole or cut

Shredded Mozzarella Cheese – 1/2 cup

I cut up the cucumbers into bite size pieces, added the olives and mozzarella.  Covered everything with the Italian Dressing and then put in the fridge for about an hour to get cold. That’s it. Easy and Yummy! I hope you will try it!

You can adjust the menu to fit your needs. You can add any cheese that you have on hand. Or you can add tomatoes to the entire thing for even more taste.

The only thing I worry about at summer picnics are ants, and my friend Ferb here seems to be very excited about trying these recipes!

Buckey Candy, My favorite Christmas Cookie!

Here is my recipe for Buckeye Candy / Cookies.

Ingredients:

2 cups creamy peanut butter

1/4 cup (1/2 stick) butter – softened

3 3/4 cups (16 oz bag) powdered sugar

2 cups (12 oz pkg) semi sweet chocolate morsels

2 tablespoons Butter (for chocolate)

1/4 bar paraffin wax
