Light and Loaded Potato Soup
Hi, I am Shannon from Coupon Savings In The South. I am so happy to be here to show you some of my favorite winter time comfort food.
Light & Loaded Potato Soup
6 cups frozen hash brown potatoes, partially thawed
1 onion chopped
6 cups fat free chicken or vegetable broth
¼ cup all purpose flour
1 (12oz) can evaporated skimmed milk, divided
¾ cup non fat plain Greek yogurt
Salt and pepper to taste
Green onions, cheese, turkey, bacon, can be optional toppings.
1. In a slow cooker mix potatoes, onion, and broth. Cook on low for 6 to 8 hours.
2. In a small bowl mix flour into milk, stir into potato mixture. Increase to high. Cover; cook 20 to 30 minutes or until mixture thickens, stir in yogurt and season to taste.
3. Serve with green onion, cheese, and bacon or any other additional toppings.
